Not that Moroccan food is new – in fact it is very old and has absorbed influences from many cultures including the native Berber’s, plus Greek, Roman, Arab, Spanish, Portugese Turkish and Jewish traditions, all combined into a stunning and original approach to flavour that has been described as “The last of the great undiscovered cuisines”.
Moroccan Food features slow-cooked stews braised at low temperatures, resulting in tender meats and aromatic vegetables and sauces. A unique cuisine characterized by subtle scents, delicate flavours and elegant presentation, it features cooking and presenting meals in a traditional clay pot called a tajine.

A tajine consists of two parts; a base unit which is flat and circular with low sides, and a large cone or dome-shaped cover that rests inside the base during cooking. The cover is designed to promote the return of all condensation to the bottom. With the cover removed, the base can be taken to the table for serving. This unique cooking implement makes Moroccan food fantastic for dinner parties.
