Baked Apples In Red Wine

Ingredients

½ Cup Sultanas
350ml Red Wine
Pinch ground Nutmeg
Pinch ground Cinnamon
4 Tblspn Caster Sugar
Pinch grated Lemon Zest
6 tart Apples, even size
3 Tblspn Butter

Method
In a small bowl, combine sultanas with red wine.  Stir in spices, sugar and lemon zest.  Set aside and stand for 1 hour.

Preheat oven to 190C.  Wash apples, use an apple corer remove the core without cutting through to the bottom of the apple.

Spoon the sultana mixture carefully into the apples and drizzle a little of the spiced wine into the apples.

Put apples into a buttered baking dish in a single layer,  pour remaining wine over apples place a knob of butter over each core hole and bake for 40 – 50 mins or until apples are soft but still firm.

Serve hot or at room temperature.
